Beef Bowls
This one is from Daryl-Ann Denner and we are LOVING it! It is just a few simple ingredients and takes maybe 30 minutes tops! We use frozen rice and it probably takes 15 minutes to make the whole meal! If you are gluten free, make sure to use gluten-free soy sauce and check the ingredients on the sweet chili sauce. I’ve been getting the Trader Joe’s Sweet Chili Sauce (TJs is our most accessible store during quarantine) and then whatever gluten free soy sauce I can find on Amazon! You can find GF soy sauce at most major grocery stores, but if you can’t find it and don’t want to wait on Amazon, you can look for coconut aminos as well!
Burger Bowls
I honestly did not expect my husband to like this one the first time I made it, but he LOVED it so much that it has become a weekly meal for us! This recipe is from Chrissa at Physical Kitchness. I enjoy many of her recipes, but this one is my favorite by far! It is already gluten-free so no substitutions needed here!
My husband gives this recipe a 10/10 and is constantly requesting it!
Turkey Meatloaf
If you make this recipe, don’t judge a book by its cover. This is one of those that doesn’t look good but TASTES AMAZING. It is from Gina at SkinnyTaste, which if you haven’t checked out her recipes you need to! You can filter her recipes to only show gluten free ones or whatever other dietary concerns you have! This meatloaf is SO good. We make the 4 petite meatloaves so that they cook in half the time! We also double the sauce because well…we love sauce. Make sure to use gluten-free oats, but other than that there are no substitutions needed!
Balsamic Chicken
This one has been one of our favorites for a longgggg time. I love that it only takes one pan, and it turns out SO good. I usually make this with whatever veggies we have on hand, but it is best with the ones listed in the recipe! Always check your dressings for gluten, but other than that you should be good to go on this one! Thanks Chelsea from Chelsea’s Messy Apron for this recipe!
Banana Mug Cake
Okay so this isn’t a meal, but it is SO good that I had to share! I came across this recipe from The Curious Frugal when I was looking for some way to use up my old bananas without making a full loaf of banana bread that I didn’t have the ingredients for. This one was so simple to make, and so delicious that we buy bananas and wait for them to turn brown just so we can make this! With its minimal ingredients, this recipe is easy and already gluten free!
P.S. When I first made this I didn’t have any almond flour, so I used a regular 1:1 GF flour and it worked great. Feel free to experiment with what you have on hand!

Those all look so good! I’ll definitely have to try them. I’m intrigued by the burger bowl… We never eat bread at my house anyways so that’d be something to change things up!
