Gluten Free Banana Mug Cake with chocolate chips - Ashley B Morgan

Okay, guys, this is going to be a super quick post, but I just HAD to let you guys know about something we have been making every week! It all started when I was looking for a recipe for gluten free banana bread during quarantine…ya know…like everyone else. BUT I ended up with this gluten free banana mug cake instead and it is SO so good and so quick!  

We had some overripe bananas that I was wanting to use up, BUT my loaf pan was MIA (it has since been found PTL). I started looking for other ways to use overripe bananas and that’s when the magic happened. I found a recipe on Pinterest that sparked my interest, but the ingredients just weren’t doing it for me. So after a couple of changes and a few rounds of experimenting, I have finally decided it is ready to share with you guys! 

Are you ready for the EASIEST gluten-free recipe you will ever find! 

What you will need: 

  • 3 Tbsp gluten free flour
  • ¼ tsp vanilla 
  • 1 egg
  • 1 overripe banana
  • chocolate chips
  • non-stick spray

First, buy some bananas…and then wait for them to get over-ripe. Yep. We literally buy bananas for this purpose now. 

Next, add the banana to a small mixing bowl and mash. 

Then, add the vanilla, egg, and flour. Mix until combined. 

Add in as many chocolate chips as you want. This part is really up to you, and determines how sweet your mug cake will be! We usually do around 1.5 tablespoons. 

Spray the inside of a mug with your non-stick spray, and pour the mixture into your mug. Top with as many chocolate chips as you would like. 

Now is the easy and hard part. Microwaving it! Because mugs come in all shapes and sizes, it is hard for me to tell you exactly how long you need to cook your mug cake. A good rule of thumb is to start with 1 minute and increase by 30 seconds as needed. You want your cake to be spongy on top! Starting with just 1 minute also helps make sure you don’t overflow your mug and make a mess in your microwave! 

For example, the clear mugs I used in this post are pretty deep, so they actually take around 2 minutes to cook! 

Once you have your mug cake cooked, let it sit for a bit because it will be HOT! Then ENJOY and start thinking about how you will be making this tomorrow night too.
